The owners of Essenze Chocolate are in the sprint towards the Easter finish line but they have been planning this period with military precision.

Even back in February they were at their Caringbah store until midnight making sure everything was in order for this busy time.

‘‘In the week leading up to Easter we do all-nighters to keep up with demand,’’ Ms Vitelli said.

For Easter they have the usual eggs, bunnies and chickens, and quirky Mr Potato Heads and even chocolates designed to look like iPhones.

The couple are passionate about their product and want people to experience great, rather than mediocre, chocolate.

Usually better quality chocolate comes with a hefty price tag but Ms Vitelli is aware of keeping prices reasonable.

‘‘People want value for money and when we first started people [assumed we would be expensive] then they came in and found we weren’t.’’

The base is Belgian chocolate, renowned as one of the world’s finest, and everything is made fresh from scratch in-store.

Fillings for individual chocolates use real ingredients such as champagne and manuka honey rather then cheaper oils or essences.

Surely the couple gets sick of the sweet stuff ?

‘‘I dream about chocolate and I’m a chocoholic,’’ Ms Vitelli said.
